Betty’s Pecan Pralines

In this video, Betty demonstrates how to make Pecan Pralines. This is a recipe that is composed of buttermilk, soda, sugar, butter, salt, vanilla, and pecans. The pralines are “soft,” as opposed to traditional sugary pralines. This has been one of my family’s favorite confections for many years, and we usually have these pralines during the holiday season. However, they are delicious any time of the year! Ingredients: 1 cup buttermilk 1 teaspoon baking soda 3 cups sugar 1 cup butter, melted and cooled to lukewarm 2 tablespoons light corn syrup pinch of salt 1 teaspoon vanilla extract 3 cups chopped pecans In a large pot, combine 1 cup buttermilk with 1 teaspoon soda, stirring until the soda is dissolved. Add 3 cups sugar, 1 cup melted butter, 2 tablespoons corn syrup, and a pinch of salt. Bring mixture to a boil over medium heat. Reduce heat and cook, stirring constantly, until mixture reaches soft ball stage (236 degrees F). Remove from heat and let stand until lukewarm (110 degrees F). Add 1 teaspoon vanilla and 3 cups chopped pecans. Beat until mixture begins to thicken and loses its gloss. Drop by tablespoonfuls (or size of your choice) onto waxed paper. Let stand until firm. Serve on a nice platter or in a candy bowl. You may store these in an airtight container. Or, you may freeze these and thaw when ready to serve. If you are having guests for New Year’s Eve or New Year’s Day, this is a gorgeous and luscious addition to your party. I hope you enjoy the pralines

    hi… thanks for the recipe… its a nice.. i will make this with milk and lemon juice because in my country we dont have buttermilk.. i hope it is better than your recipe….. ;)

    OH Betty I absolutely love this type of Praline, and am so happy to have this recipe. I have been buying the Pecan Pralines at Neiman Marcus for years because they are the soft ones like this instead of the hard sugary ones. I will be doing this tomorrow if I have the Lt corn syrup. I know I have the other ingredients (even buttermilk for a change!) OHHHHH I LOVE THESE!!!!

    Hmmm I did not know that pralines were this! I’ve had “pralines n cream” ice cream, which has caramel swirls and coated peanuts. I always thought pralines were coated peanuts. Oops! :)

    I love your blouse. Looks lovely in that shade or red. I also like pralines;however mine have never turned out so well. I will try your recipe and see if my luck changes. My cashew brittle seems to come our correct,but never my pralines. Wish me luck. I will follow your recipe to the letter.

    Wow I gotta try those. I’ve made the traditional pralines for years and when you kept stirring after it lost it’s gloss I was screaming HURRY UP lol because with traditional pralines, when the gloss goes you’ve got like 30 seconds to slap them on the waxed paper.

    Those look easier for that reason, and delicious.

    This Looks Sooo Yummy !
    Do you have any recipies similar to this made with Corn Flakes ??? My Gma use to make a candy like Cookie with Corn Flakes it was Sooo Good ! Can U Help ?

    Those look wonderful! I want to say that Karo syrup is acceptable to most people for use. I guess it’s the high fructose corn syrup which is the “bad” type. This is found in cheaper corn syrups.
