Greetings! Earlier this week, I had a fridge full of leftovers that seemingly did not go together, but after some thought, I realized I had a great quick and easy meal ready to go! I had lots of rice left from our chili meal, then I had about 2 cups of roasted pork loin left from my familys new year celebration as well as some assorted veggies in the crisper drawer and eggs. I had Fried Rice! Pork Fried Rice! The measurements are really only for reference, this is not a formal recipe, so use what you have, dont have pork? Use leftover Chicken or Steak, or even some ground beef. Dont have the veggies I used? Use an onion, some garlic and some frozen mixed veggies or even something from a can that has been drained. This is not Rocket surgery here folks, this is leftovers..only better! Here is how I made my Pork Fried Rice: Plain Veggie oil 6 cups leftover cooked rice 2 cups roasted pork cut into cubes 4 fresh eggs beaten with 1 tablespoon of soy sauce added 1 small onion diced 2 stalks of celery diced 2 cloves of garlic chopped 1 small knob of fresh ginger, grated or chopped fine or 1 tablespoon of prepared jarred ginger. ½ cup carrots diced or sliced ½ cup green bell pepper diced 1 teaspoon sugar additional soy sauce to taste In a large skillet or wok add about 1 to 2 tablespoons vegetable oil to pan and heat until it ripples.
